Pork Salamini – fennel, orange and garlic

A shameless theft of classic Tuscan flavours that are perfection with pork

We use freshly zested orange and orange juice, fresh garlic and toasted fennel seeds to make this beautiful salamini. Try it with a Lambrusco, not fashionable, but fabulous.

About the size of a pork banger, store in the fridge loosely wrapped, and use within 3 weeks of arrival
