We use freshly zested orange and orange juice, fresh garlic and toasted fennel seeds to make this beautiful salamini. Try it with a Lambrusco, not fashionable, but fabulous.

About the size of a pork banger, store in the fridge loosely wrapped, and use within 3 weeks of arrival
