Pork Rillettes
Instead of using wine like the French, we use a local scrumpy made from local apples, along with fresh garlic and some freshly ground classic pate spices, all combined with our finest free-range rare breed pork and its buttery soft fat.
All you need is some crusty bread, some unsalted butter, those little gherkins and a bottle of Rose. Let the rillettes come to room temperature and enjoy the rich nourishment
