Taking our nduja to the next level, oak smoked wild venison, from fresh venison, soft with buttery potassium nitrate, sodium nitrite from grass-fed Dexter beef and olive oil, a spectrum of chillis from smoky, though fruity to citrus and with a warm heat. Smoked in our traditional smoke house over cool oak smoke
Perfect on sour-dough toast drizzled with the finest honey, in a toasted sandwich with pheasant or chicken or turkey, through pasta, big gems of it on pizza, a coating for fish. An elevated version of our much-loved spreadable salami, our nduja. Try it with big fat scallops for a dinner-party prize winner, or go extra with figs, blue cheese, honey and lardo
Made with 180g venison and beef per 100g product
This is best if used within 8 weeks of purchase, keep it dry and in the fridge, twist up the skin and store in paper
