Lardo
Super melting and tender with a spicy touch and the crunch of salt. Grill on toast and enjoy with a Negroni or use on pizza, wrap it around anything that needs porky lardy goodness such as chicken or game bird breasts or fish. Keep it tightly re-wrapped and it will be good in the fridge for a month. It can also be frozen if tightly wrapped. The most important thing is to exclude as much air and heat and light.
Lardo has its place on a charcuterie board too, serve with walnuts, honey and figs
