Wild meat is the most ethical way to enjoy superb meat because it is culled. It is full of excellent nutrition, as well as taste. Properly raised pigs and sheep have a positive effect on the natural environment. Making charcuterie elevates forest-reared and “ranched” meat to new levels of deliciousness. These animals living longer and happier lives. They grow more slowly so they are tastier and more nutritious. Low-impact animal farming is vital to the health of the soil. Enriched soil supports the diversity of insect life, and their predators, the birds and wild mammals. Most of our wild game comes from Scotland, where it is culled to help ensure balance in nature

Our charcuterie will bring you epicurean joy, some nostalgic tastes, and some novel ones too. Our products are always balanced because we use the very best ingredients and take pride in their use. We make meats you can be proud to share with friends, family and others. This is British charcuterie excellence.

Charcuterie is the artisan skill of preserving meat by curing, fermentation and drying. Although it is essentially a European tradition there are places in all continents where meat and fish are dried in times of plenty to store safely for the harder times. Although we now have refrigeration the techniques remain because the concentration of flavour and the changes in texture achieved through charcuterie create new umami flavour and aromas which are very pleasurable.
